Be careful not to rub your eyes or skin after doing this. 5   Combine onion, garlic, Monterey Jack, Cheddar, cream cheese, cilantro, cumin, salt and pepper in a bowl. 6   Add in as much of the chopped jalapeno bits as you like. 7   Combine Panko and Parmigiano-Reggiano in a bowl. 8   Fill hollow peppers with cream cheese filling. 9   Press the filling side into the Panko to get a crispy coating. 10   Arrange poppers on a baking sheet. 11   Spray them lightly with cooking spray. 12   Bake about 19 minutes, until crumbs are browned and filling bubbles. 13   Let them rest for about 10 minutes before digging in. <div> </div><div> </div><div> </div><div><div style="background-color: white; font-family: sans-serif; font-size: 13px; line-height: 19.1875px; margin-bottom: 0.5em; margin-top: 0.4em;">This is the version often said by the President of Mexico in the national commemorative activity in the National Palace or at the church in Dolores Hidalgo. In Mexico, is easy to buy every were grilled corn which sometimes comes slathered in mayonnaise, rolled in grated cheese and served with lime and chili powder. if you are lucky enought to find all the ingredients then you should give it a try Prep: 25 min. Grill: 25 min.Yield: 6 Servings Ingredients •6 large ears sweet corn in husks •1/2 cup mayonnaise •1 chipotle pepper in adobo sauce, finely chopped •2 tablespoons minced fresh cilantro •2 tablespoons lime juice •1-1/2 teaspoons grated lime peel •1 garlic clove, minced •1/2 cup grated Asiago cheese Directions •Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Rewrap corn in husks and secure with kitchen string. Place in a stockpot; cover with cold water. Soak for 20 minutes; drain. •Grill corn, covered, over medium heat for 25-30 minutes or until tender, turning often. •In a small bowl, combine the mayonnaise, chipotle, cilantro, lime juice, lime peel and garlic; spread one heaping tablespoon over each ear of corn. Sprinkle with Asiago cheese. Yield: 6 servings. Nutritional Facts 1 ear of corn equals 289 calories, 18 g fat (3 g saturated fat), 13 mg cholesterol, 240 mg sodium, 28 g carbohydrate, 4 g fiber, 7 g protein.   </div>

Mix in the milk, 3/8 cup sugar, 1/3 cup melted butter, salt, egg and half of the flour. Gradually mix in the remaining flour, and 1/2 teaspoon cinnamon. Turn the dough out onto a floured counter to knead as soon as it pulls together enough. 2.Knead for 6 to 8 minutes, until smooth and elastic. Place in a large greased bowl, and turn the dough to coat. Cover, and let rise in a warm place until doubled, about 1 hour. 3.Make the topping while the dough rises. In a medium bowl, beat 2/3 cup sugar and 1/2 cup butter until light and fluffy. Stir in the flour until the mixture is the consistency of thick paste. Divide into two parts, and place one part in a separate bowl. Mix cinnamon into one half, and vanilla into the other half. 4।When the dough is done rising, cut into 12 even-sized pieces. Shape into balls, and place on a greased cookie sheet, spacing about 3 inches apart. Divide each bowl of topping into 6 balls, and pat flat. Place circles of topping on top of the dough balls patting down lightly. Use a knife to cut grooves in the topping like a clam shell. Cover and let rise until doubled, about 45 minutes. 5.Preheat the oven to 375 degrees F (190 degrees C). Bake for 20 minutes, or until lightly golden brown. Cajeta - Mexican Caramel Sauce

Makes about 3 cups Ingredients 2L 2 quarts goat's milk or a combination of goat’s milk and cow’s milk—or even with all cow’s milk (use whole milk in all cases) 500g 2 cups sugar A 2-inch piece of cinnamon stick, or 1/2 tsp of ground cinnamon 1/2 teaspoon baking soda dissolved in 1 tablespoon water Directions 1. Simmer the cajeta. In a medium-large (6L 6-quart) pot (preferably a copper one), combine the milk, sugar and cinnamon stick and set over medium heat. Stir regularly until the milk comes to a simmer (all the sugar should have dissolved by this point). Remove the pot from the heat and stir in the dissolved baking soda—it’ll foam up if the goat’s milk is acidic. When the bubbles subside, return the pot to the heat. Adjust the heat to maintain the mixture at a brisk simmer (too high and the mixture will boil over; too low and the cooking time will seem interminable). Cook, stirring regularly, until the mixture turns pale golden, more or less one hour. Now, begin stirring frequently as the mixture colors to caramel-brown and thickens to the consistency of maple syrup (you’ll notice the bubbles becoming larger and glassier). Stir regularly so nothing sticks to the bottom of the pot. Test a couple of drops on a cold plate: When cool, the cajeta should be the consistency of a medium-thick caramel sauce. If the cooled cajeta is thicker (almost like caramel candy), stir in a tablespoon or so of water and remove from the heat; if too runny, keep cooking. 2. Finish the cajeta. Pour the cajeta through a fine-mesh strainer set over a bowl or a wide-mouth storage jar. When cool, cover and refrigerate until you’re ready to serve. The past September 16Th, Mexico commemorate the bicentennial of its Independence (1810) from the Spanish Crown and in November 20Th the 100 anniversary of the Revolution. It varies from region to region and different chilies are used in different versions of this tasty dish. This tomato-based Mexican food recipe is richly flavored with garlic and onions and the avocado, tortilla chips and chicken add even more delicious taste. This is one of the best and most authentic Mexican food recipes and it is believed that Aztec soup was invented to use up stale tortillas, since some versions of the dish use tortillas rather than tortilla chips. 1 quart chicken broth 2 tomatoes, roasted and peeled 2 cloves garlic, peeled 1 small white onion 2 quajillo chiles, seeded and soaked in hot water 15 minutes 4 epazote leaves (optional) 4 corn tortillas shredded cheese sliced avocado Mexican crema or sour cream oil as necessary Put the tomatoes, garlic, onion, chiles, and epazote in a blender with just enough of the chicken broth to allow the blades to move and make a smooth puree. Heat about 1 Tbls. of oil in a medium saucepan and fry the puree for about 15 minutes. Add the remainder of the broth and cook another 15 minutes. Add salt to taste. Cut the tortillas into Frito-size strips and fry them in oil until crispy; drain on paper towels. Serve the soup garnished with the tortilla strips, cheese, avocado slices, and cream. Bring this to a boil. Add the flour all at once and stir with a wooden spoon until it comes together into a smooth ball. Transfer this to the bowl of an electric mixer (or if you want to do it by hand) and start mixing with a paddle attachment. When most of the steam has evaporated, add the eggs one at a time. Mix until it comes together to a smooth thick mass. Transfer to a pastry bag fitted with a star tip (#5). In a wide pan that has tall sides, pour about 3" deep of canola oil. Heat it to 350F. When it reaches the temperature, pipe the batter into the oil and cut with scissors. Fry them until golden brown. Remove the churros from the oil and roll them in cinnamon sugar. Serve immediately.
